Vegan Battered King Oyster Mushrooms

Today I had a go at making these gorgeous vegan battered king oyster mushrooms in my air fryer that I was kindly gifted by Instant Pot UK. This was such an easy and tasty recipe to make and is perfect if you’re looking to cut down on your meat consumption. If you want to have a go at making these yourself I have left the recipe below:

150g king oyster mushrooms
225 ml soya milk
Teaspoon of lemon juice
200g plain flour
1 teaspoon salt
1 teaspoon pepper
1 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon garlic granules
1 teaspoon onion powder

Method

-Wash the mushrooms and pat dry
-Mix soya milk and lemon juice together and place the mushrooms in this mixture to soak for 15 mins
-Mix together spices and flour
-After 15 mins get your mushrooms and place them in the flour mixture until coated
-With the soya milk mixture place battered mushrooms in this again and then back in the flour mixture so they’re double coated
-Cook in airfryer for 15 mins at 190 degrees
-Once cooked let them cool for a minute and enjoy with a dip of choice

Crispy Roast Potatoes

The art of making the perfect crispy potatoes is one im glad I’ve learnt. Whether, it’s in my roast dinner or even just a normal side, here’s my step by step recipe:

Step one: pre-heat the oven to 200 degrees and peel and cut potatoes

Step two: wash the starch off the potatoes

Step three: boil a pan of water and par boil the potatoes, whilst the potatoes are boiling put a pan in the oven that is lightly covered with oil and heat this up in the pre heated oven

Step four: once the potatoes have par boiled, take the pan out of the oven (be careful with the hot oil) and put the potatoes in, season how you wish – I use garlic, rosemary, thyme, salt and pepper

Step 5: put in the oven for around an hour until golden and crispy, take them out every 15 minutes to move around just so they cook evenly

Drizzled Brownies

I was kindly gifted some treats from Doisy&Dam which included their dark chocolate peanuts and dark chocolate drops. I knew instantly I had to try them in a brownie recipe and wow they were amazing!! I’ve had their products previously so knew I was going to be tasting good things.

I love this brand for the simple fact they’ve produced great tasting vegan products as well as using natural ingredients, zero palm oil and the cocoa is ethically sourced.

Now I bet you’re all wondering how to make these brownies, I’ve listed the ingredients and method below

Ingredients
150g vegan butter
75g light brown sugar
150g vegan chocolate
1tbsp golden syrup
Egg replacement (the equivalent of 3 eggs)
125g golden caster sugar
150g plain flour
1tsp vanilla extract
1/2 tsp baking powder
3 tbsp cocoa powder
5 tablespoons of vegan chocolate spread
1 bag of Doisy&Dam chocolate drops (put a few aside to decorate)
1 small white vegan chocolate bar to decorate
1 small milk vegan chocolate bar to decorate

Method
1. Preheat oven to 180 degrees
2. Melt together vegan butter, brown sugar, vegan chocolate and golden syrup in a bowl
3. In a different bowl, mix egg replacement and caster sugar together, then add vanilla extract, then over this sift the flour, cocoa powder and baking powder
4. Add the two bowls together
5. Fold mixture together
6. Add the vegan chocolate spread
7. Pour the mixture in the tin and cook for around 30 mins until the brownie has cooked, is looking slightly cracked but underneath still has a wobble to it.
